Farinata is classic in Ligurian kitchen. It is a very small pie made with simple ingredients: chickpea flour, water, salt and extra virgin olive oil.                                                                         Its origins date back to the period of the Greeks and Romans, when soldiers used to prepare a mixture of chickpea flour and water were then bake in the sun or on your shield.                                                                                                                                                                       The bottled dough is the anwer to bring a bit of Liguria everywhere you go. The content of one bottle makes 3 trays of a 28cm diameter. Simply pour it into the tray and bake it for about 20 minutes. You can enrich your recipe adding some thin slice of onion or artichoke to transform a plate into a masterpiece. It's all up to your creativity.
